To have the ability to choose how many walls you print on parts.
This could be especially good when you have a mix of thick and thin parts in the same model.
Thin parts can have their infill eliminated and thicker parts will have the benefit of strength from the walls with less infill% needed to have the same strength.
As a 3D printing enthusiast I appreciate having a printer at work that for most parts/ models is just plug and play (i.e. use the settings that the software comes up with).
People can print their things without any support of someone more knowledgeable.
But in some specific use cases you need to alter the settings, wall count is one of those settings in my humble opinion.
